when does this game get less confusing?

It really depends on your preferences and how you like to play games. Just as an example I have been playing for 10 years, have probably 20,000 hours and I still learn a few things here and there - but I have put in the work to understand everything not only playing but watching YouTube videos etc.

A more interesting topic would be what do I know about the lore of POE. Not a damn thing - it is of no interest to me but lots of players enjoy it.

Anyway the best advice you will get when you start out is to follow a detailed guide (even if you don't want to because you think it will spoil your experience). That would be true if leveling up was a "unique experience" but if you play the game you run the campaign so much (over the years) that you literally know every square inch of terrain and every monster by their first name. The reason this game has staying power is that most of the content is once you get past the campaign and start grinding. So don't hate on the campaign - it is basically a tutorial where you get to keep any loot you get.

I've started playing this game few weeks ago. Built myself a Witch and was doing great until about Act 5 where it went downhill. Found this forum and started a complete new build - Juggernaut. Followed the guide loosely and started to struggle around Act 9 and 10 so asked for help. Turns out, you have to follow the guide 100% in order for your build to work which is a bit of a pain. I'm in the Atlas bit now and still have no idea what's going on most of the time while trying to get my gear to work :o)
Overall it's fun to play but definitely overwhelming for a casual player. Also playing on Xbox makes it harder to play as you can't just point your mouse wherever you want.
You only make adjustments to a build once you are experienced enough.

I assume your jugg is boneshatter or RF? Both builds require specific defensive thresholds to work properly. This is why I tell new players do use Champion instead - extremely well balanced and can be used with pretty much everything

Do you have any guide for Champion? I may start another character, now that I know so much more than I did last week. I've done quite few maps ans still haven't found right gear for my Boneshatter.
Explosive arrow is the easiest one by far. You can just google it - plenty of guides for one of the most popular builds in the game
I had a quick look and it looks fairly easy and fun build but 'playability' may be a bit tricky for Xbox. I found a lot of suggestions for Righteous Fire Inquisitor which looks great. What do you think about that build?
RF is a great build but as pointed out above, it's a selfharm build. If you don't get the needed defensive thresholds you'll end up dying on your own. Never mind scaling your damage. If you aren't confident that you can follow the guide then this type of build might not be the best idea.
Wait for PoE 2.

Currently, PoE is unplayable game for many. sad but true.
Ok for real though, never. However if you focus on a specific play style, or specific skills, not very long. You will never know everything, because it is simply impossible.

The best way to learn is to ignore what you don't know, and choose 1 thing at a time to learn.

So, you assume fresh and untested game with a lot of bugs and broken mechanics will be better and more playable than the game with relatively good balance? Oh really? In which world?
