What's the reasoning behind dying against a boss bleaching your map?

It was indeed an anti-cheat thing they had to add.

Jonathan said in last interview with talkativ tri that they are willing to change it but they havent find a way to prevent the cheat otherwise yet.

People dying on purpose to the boss to redo the content on the map. Something like that.

This is the link of the video, question is at 12:44

IT was always bugged they just dont know how to fix that map is bleached after dying to a Boss, they said they "fixed" this bug but it was never wkrking, noone tested this yet they still released that patch. On 0.1 we had only one life

0.2 patch notes

You can now respawn and return to a Map if you die. Upon first entering the Endgame, you get up to 6 total attempts per Map. As you add more Modifiers to a Waystone, the number of respawns goes down.
In parties, everyone gets to respawn that number of times.
You will be able to enter and exit your Maps as much as you like as long as you haven't died. The number of portals is representative of the number of revives you have during the Map.

I dont remember any exploit, it was always cleaning whole map since day 1

I dont know, that's just what Jonathan said about this and what i always heard when i searched why.

Wait and see if it change, kill boss last until than, is what i do =)

The reason this happens is because they don't have a method to reset the boss to its starting state without resetting the entire map. Resetting the entire map while maintaining the content would obviously enable exploits, so they remove all the content. Of course they could build a system to just reset the boss chunk, but it's easier and simpler to make it into another punishment for the player.

seems to me that your explanation is the most logical.

before this, i am also unable to figure out why dying to a boss removes every content from the map.
