You do get a lot more ES compared to mana if you compare the ES setup VS mana setup. Yes, ES is the tankier version currently.
Do you have max elemental resistances and max chaos res? And yes I think you need more mana, it probably needs to be around 3-4k to make it feel good.

Hey Helm, been grinding out my Infernalist. I am level 95 and working on finding Citadels now. I have no issues with defense with such a high ES at 9400 base and double that with Grim Feast. I would say the gear on my build is roughly 10 divines. No where near min/maxed but super tanky and melting bosses no issues.

I have been solely grinding my witch minion infernalist for hours and hours. I am at the point now where I can tweak my build based on what situation I am encountering. Fast map clears, bossing, pinnacle bosses, breaches - all no problem.
