Random one shots will happen when you are pure evasion character.
You could switch out grace for determination and use a granite + jade flask.

You can start out with a 50+ dex / 10% Increased dex / Crit.
Get a timeless with 15% dex that shouldnt be that hard to buy or divine yourself.
