Trying to understand Warrior armour/weapon/passive stats?

My first PoE2 character (both this season and... ever before) is a lvl 96 minion lich/witch. I'm currently leveling a side warrior/warbringer but I don't understand how some of their damage stats work together.

I tried watching this guys video: https://www.youtube.com/watch?v=MvwmmjVIes0&list=WL but some of it was still a bit over my head.

How does a stat like "#% of Armour also applies to Elemental Damage" work? It doesn't seem to affect the detail tab for skills at all, I have the stat on my chest but taking it on/off doesn't change anything even though I have the "Fire Attunement" support gem on everything and have the "Burning Strikes" passive, so it should be boosting that fire damage?

Then pretty much the same question for "#% increased Elemental Damage with Attacks" on weapons? I don't know what would work better. If you had a choice between a T1 of that stat, such as 100% element damage v.s. T1 "Adds (88–101) to (133–154) Fire Damage" which would be better if you had to choose?

Then there's the myriad of non-elemental damage: +Physical damage, Attack damage, melee damage, 1h/2h damage, area damage, etc.

This affects damage taken, not damage dealt.

Well that's poorly worded, it makes it sound as if you armour will improve your elemental damage.

I had no trouble understanding this. Armour only applies to Physical Damage. With this mod Armour also applies to Elemental Damage.
Add # to # type damage tags
These directly add to the damage on the weapon and are some of the best choices for overall damage.

% Physical damage multiplies the physical damage on the weapon
It applies directly to the weapon and updates the stats.

% Elemental damage will multiply any elemental damage you attacks do.
It multiplies any base damage or converted physical damage.
It adds directly with any damage you get from your skill tree but doesn't update any off the damage stats on the weapon.

Gain Damage types will gain you a % of the total damage of the weapon.
This includes any add damage but ignores % multipliers.

Attack damage, melee damage, 1h/2h damage, area damage, etc.
Like the elemental damage these add into the damage numbers from the skill tree and they apply to any skills that have those tags or use those weapon types etc.

Damage= (Weapon damage + Gain damage) * (1+ (total damage multiplier /100)) * MORE damage * More damage etc...
