I have 3 colored mushrooms from act 2 and it doesn't specify what to do with them. I'm unsure how to look at my quests but there doesn't seem to be much indication on as what to do with them.. am I missing something? I'm on act 3

I assume you mean act 3. You need to find the Cauldron Keeper (a vendor npc) in the Drowned City. You will throw all the mushrooms into the cauldron and out will pop a bunch of flasks.
