When will console get the new patch with the fixes to harvest? A few days behind like normal im assuming? Just want to know how long to save my seeds until everything is fixed.

I don't have an exact date as of right now, but we're currently testing it on consoles. We aim to deploy it as soon as it's ready; at earliest it will be Monday, but that's not guaranteed.
